Bún Thịt Nướng

  • 1-2 lbs of thinly sliced pork loin
  • 5-8 cloves of garlic 
  • 2 large shallots (~1/4 cup)
  • 1/2 cup of frozen/fresh grated lemongrass
  • 1/4 cup fresh lemon/lime juice
  • 1/2 cup fish sauce (I recommend Red Boat)
  • 1 teaspoon sesame oil
  • 1 teaspoon dark soy sauce or coconut aminos
  • 2 tablespoons of chili garlic sauce (Huy Fong Foods, Inc)
  • 1 teaspoon sweetener ((I recommend Trim Healthy Mama’s Xylitol-Free Gentle Sweet, I always use Xylitol-Free because Xylitol is toxic to dogs) (non-keto – 2 teaspoon brown sugar)
  • 1 teaspoon black pepper
  • Peanuts (garnishment)
  • Fresh Thai basil
  • Freshly sliced tomatoes
  • Freshly sliced cucumbers
  • Freshly chopped romaine lettuce
  • 2 Freshly sliced Thai or jalapeno peppers
  • 1 bag of fresh bean sprouts 
  • 2 cups of Nuoc Mum/Nuoc Cham as dressing
  • 1 stick of butter (for pan frying if not grilling)
  • 2-4 packs of Miracle Noodle brand Angel Hair (non-keto vermicelli)


  • Marinade: in a blender or food processor, puree garlic, shallots, lemongrass, lemon/lime juice, dark soy sauce, sweetener, fish sauce, chili garlic sauce, black pepper, and sesame oil until everything is liquified
  • Placed thinly sliced pork loins in bowl
  • Add marinade to pork and mix until mixture is evenly dispersed
  • Cover bowl and allow to marinate in the refrigerator for at least 45 minutes or overnight
  • Wash and slice tomatoes, cucumber, and peppers
  • Wash and pick off leaves of basil
  • Wash and chop romaine lettuce
  • Wash bean sprouts
  • Crush peanuts in ziploc bag using blunt object
  • Once pork has marinated, remove from refrigerator and allow to warm to room temperature before cooking
  • To cook: either grill the meat or pan fry the meat at high heat. ~400° of grilling or put the heat on high with 1/2 stick of butter, if frying. Cook until sliced pork loins are well done or golden brown (if frying).
  • In a serving bowl, layer the ingredients by placing lettuce and bean sprouts at the bottom, miracle noodle (vermicelli for non-keto) on top of lettuce and bean sprouts
  • Place sliced cucumbers and tomatoes on top of the noodles to one side
  • Add fresh basil leaves on center
  • Place cooked pork on top of basil leaves
  • Sprinkle crushed peanuts on the meat
  • Add sliced peppers
  • Pour Nuoc Mum on to of everything in the bowl, ~1/4 cup or less.
